INGREDIENTS
- 750 g lamb meat
- 15 whole small onions
- 10 cherry tomatoes
- 4 small potatoes
- 1 onion
- 4 cloves of garlic
- Sprig of flat-leaf parsley
- Sprig of fresh rosemary
- Sprig of fresh thyme
- Sprig of fresh marjoram
- Garlic extra virgin olive oil
- Salt
- Ground black pepper

- All-purpose flour

INSTRUCTIONS
- 1In a wide copper pot, add garlic oil, then place quartered, peeled and sliced potatoes, whole small onions, and cherry tomatoes on top.
- 2Sprinkle with about two spoons of finely chopped onion, coarsely chopped parsley, and other herbs.
- 3Cut the lamb meat into smaller portions, add to the pot, and pour olive oil over it. Mix the raw ingredients in the casserole with your hands. Pour in water, cover with a lid, and lightly braise until the ingredients soften.
- 4Transfer the casserole with the lid to a preheated oven to bake at least 220 °C for about 10 minutes.
- 5Remove from the oven and replace the lid with a thin sheet of dough for classic Italian white bread, pressing it to the sides of the pot to adhere. Bake for another 15 minutes and the dish is ready.
