- 400 g large vine tomatoes
- 100 g crushed tomatoes
- 150 g cherry tomatoes for garnish
- 50 g red onion
- 2 cloves of garlic
- 50 ml olive oil
- 1 bunch of basil
- 20 g parmesan
- pinch of chili
- 2 slices of ciabatta
- pinch of salt
- pinch of pepper
- 100 g mascarpone
- 10 g caster sugar
- 50 g butter
Halve the tomatoes, sprinkle lightly with sugar, place in a baking dish, season with salt and pepper, drizzle with olive oil, and roast together with the onion, garlic, and chili at 160 °C until golden brown, approximately one hour. If the juices dry out, add a little water or broth.
Transfer the roasted golden mixture to a blender, add the crushed tomatoes, and blend into a smooth cream. Drizzle the cherry tomatoes with olive oil and sear in a hot pan until golden brown. Transfer the blended soup to plates, add the seared cherry tomatoes, fresh basil, mascarpone, parmesan, and a slice of ciabatta toasted in butter.
