SKEWERS
- 250 g cherry tomatoes
- 250 g bell pepper
- 250 g red onion
- 300 g zucchini
MARINADE
- ⅓ cup olive oil
- 1 tablespoon lemon juice
- 4 cloves garlic
- fresh herbs
- salt
- pepper
Instructions
- 1Cut the cleaned vegetables into equally sized pieces so they cook evenly, and thread them onto grilling skewers.
- 2Mix the oil with lemon juice, crushed garlic, chopped herbs to taste (thyme, oregano, savory, basil, parsley, mint…), salt, and freshly ground pepper. Brush the entire skewers with the marinade and grill gently for about 15 minutes until tender.
- 3Continuously turn the skewers and brush them with the remaining marinade.
Tip
If using wooden skewers, soak them in cold water for 30 minutes to prevent them from burning on the grill.
You can also thread other goodies onto the skewers such as corn, asparagus, mushrooms, Brussels sprouts, or even pieces of tofu, tempeh, or halloumi cheese.
