Ingredients
- 880 g zucchini
- 250 g halloumi cheese
- 150 g canned corn
- 4 large cloves of garlic
- 2 eggs
- 100 g all-purpose flour
- 100 g breadcrumbs
- 20 g nutritional yeast
- Sunflower oil for frying
- Salt
- Freshly ground pepper
Instructions
- 1Wash the zucchini, trim the ends, and coarsely grate into a large bowl. Add salt and let it sweat for about 15 minutes.
- 2Then drain the water from the zucchini and coarsely grate halloumi into it.
- 3To the mixture, add corn, eggs, flour and breadcrumbs, nutritional yeast, press the garlic, add salt and pepper, and mix everything until a cohesive mixture forms that holds its shape well when you form a patty.
- 4Heat a generous layer of oil in a pan and fry the patties on both sides. Place the finished patties on a plate lined with a paper towel to absorb excess fat.
