INGREDIENTS FOR THE SALAD
- 300 g dry wheat fusilli (you can substitute with any type of pasta)
- 250 g cherry tomatoes
- 1 English cucumber (approx. 250 g)
- 120 g feta cheese (or Balkan cheese)
- 10 g fresh parsley (finely chopped)
- 5 g fresh basil (finely chopped)
INGREDIENTS FOR THE DRESSING
- 50 ml virgin olive oil
- 1 tablespoon lemon juice
- 1⁄2 tablespoon honey
- 2 teaspoons Dijon mustard
- Salt
- Pepper
METHOD
- 1First, cook the pasta: Fill a large pot with enough water and bring to a boil. Then add the pasta to the water and cook for 12–15 minutes over medium heat. After cooking, drain the pasta and rinse under cold water.
- 2Meanwhile, dice the cherry tomatoes and cucumber into small cubes in a large bowl. Then crumble the feta cheese over them and add the parsley and basil.
- 3Now prepare the dressing: In a glass (approx. 200 ml volume), combine the oil, lemon juice, honey, Dijon mustard, salt, and pepper. Close with a lid and shake.
- 4Add the cooled pasta to the bowl with the vegetables and pour the dressing over it (to taste).
- 5Let the salad chill for at least 30 minutes (ideally 1–2 hours) and then serve.
