INGREDIENTS FOR THE SALAD
- 240 g canned chickpeas
- 1 medium red or yellow onion
- 1 small cucumber
- 2 larger tomatoes
- 50 g green pitted olives
- 100 g Balkan cheese
INGREDIENTS FOR THE DRESSING
- 3 tablespoons olive oil
- ½ teaspoon dried oregano
- 2 tablespoons lemon juice
- 1 teaspoon water
- ½ teaspoon Dijon mustard (or 1 teaspoon classic mustard)
- Salt
- Pepper
METHOD
- 1First, prepare the ingredients for the salad: Drain and rinse the canned chickpeas, peel the onion and cut it into thin slices, and cut the cucumber and tomatoes into small cubes, approximately 0.5 cm × 0.5 cm.
- 2Then take a bowl, add the rinsed chickpeas, chopped onion, cucumber, and tomatoes, add the whole olives, and finally crumble the Balkan cheese into the bowl.
- 3Now prepare the dressing: Take a small jar, mix olive oil, dried oregano, lemon juice, 1 teaspoon of water, Dijon mustard, salt, and pepper in it, close the jar with a lid, and shake.
- 4Pour the prepared dressing into the bowl with the other ingredients, then mix the entire contents of the bowl, and serve the finished salad.
