Preparation method
First, finely grate the cheddar and Parmesan. Peel the garlic and also grate it finely.
Take a small pot, pour water into it and add butter. Place the pot over medium heat and bring the mixture to a boil. Once the mixture starts to boil, reduce the heat to low, add the spelt flour to the pot, and cook this mixture, stirring constantly, until a stiff dough forms that pulls away from the sides of the pot – this will take approximately 10–13 minutes. At this point, turn off the heat and stir in the grated cheddar, Parmesan, garlic, salt, and pepper into the dough. Transfer the firm dough to a bowl and let it cool for at least 30 minutes.
Once the dough has cooled, preheat the oven to 180–185 °C, prepare a baking sheet, and line it with baking paper.
