In a large pot, cover the pork bones with water and bring to a boil. Skim off any foam that forms on the surface. Then pour out the water and rinse the bones.

Fill the pot with fresh water and add chicken broth, pork broth, onion, garlic, and ginger. Simmer uncovered over low heat for 4–5 hours to develop a rich flavor.

In the last hour of cooking, add dashi. Skim off foam regularly.
Chef's tip
The longer you cook the broth, the more flavorful it will be. For an even richer flavor, start cooking the broth a day in advance and let it cool overnight to easily remove excess fat.
