INGREDIENTS
- 450 g frozen peas
- 40 g tahini paste
- 40 g olive oil
- 15 g lemon juice
- 10 g granulated sugar
- 5 g salt
INSTRUCTIONS
- 1In a saucepan, combine 1 l of water and 5 g of sugar and bring to a boil. Add the peas, bring to a boil again, and cook for 2 minutes. Drain the peas and pour 80 g of the cooking water into a blender.
- 2Add the peas, remaining sugar, and other ingredients and blend for 2 minutes until smooth. Pass through a fine sieve.
Tip
On the plate, you can garnish with a few peas and season with a few drops of olive oil.
For preparing the purée, you will need a blender.
For straining, you will need a fine sieve.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
