INGREDIENTS
- 1 kg sushi rice
- 100 ml rice vinegar
- 40 g sugar
- 20 g salt
INSTRUCTIONS
- 1Pour the rice into a large pot and add cold water. Thoroughly rub it with your fingers, pour out the water, and add new water. Wash the rice this way until the water runs clear, at least five times.
- 2Place the washed rice into a saucepan, add 1.25 l of water, cover with a lid, and bring to a boil. Reduce heat to minimum and cook for approximately 25 minutes until semi-soft. Remove from heat and let it sit covered for 10 minutes.
- 3In a small saucepan, combine rice vinegar, sugar, and salt. Heat until the sugar and salt dissolve. Do not boil! Let the prepared dressing cool down.
- 4Transfer the cooked hot rice into a bowl, pour in the cooled dressing, and carefully mix it into the rice with a wooden spoon, making sure not to break the individual grains. While mixing, fan the rice to cool it down faster.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
