Bring a large amount of water to a boil in a pot. Salt the water.

Peel the cooked potatoes, grate them coarsely, and place them in a bowl. Peel the raw potatoes, grate them finely, and add them to the cooked potatoes. Add 1 teaspoon of salt, eggs, coarse flour, and starch. Mix into a thick dough.

Using a tablespoon, form dumplings in the shape of larger gnocchi in a wet palm, and place them into the salted boiling water.
Chef's tip
Prepare the dumplings from potatoes of cooking type B or C. Coat the finished dumplings in melted lard or butter to prevent them from drying out.
