INGREDIENTS
- 750 g all-purpose flour and flour for dusting the dough
- 50 g softened butter
- 30 g fresh yeast
- vegetable oil for greasing the pan
- 15 g salt
INSTRUCTIONS
- 1Pour 450 ml of water and crumbled yeast into the bowl of a stand mixer, then add the remaining ingredients. Mix in the stand mixer at medium speed for 10 minutes until a fine, smooth dough forms. Sprinkle a work surface with flour, turn the dough out onto it, cover with a clean cloth, and let it rise in a warm place for 30 minutes.
- 2Shape the risen dough with your hands into a log, which you then divide into 8 equal parts, forming balls from them.
- 3Grease a baking pan with oil and place the balls next to each other in it. Gently press the balls and let them rise in a warm place for 45–50 minutes, until the dough reaches 2 cm above the edge of the pan.
- 4Preheat the oven to 250 °C.
- 5Spray the oven walls with water using a spray bottle until steam begins to form. Work quickly. Immediately place the pan inside, close the oven, and bake for 3 minutes. Open the oven to release excess steam, reduce the temperature to 175 °C, and continue baking for another 35 minutes until light brown.
- 6Remove the bread from the pan and let it cool on a wire rack.
Tip
If you don't have a spray bottle, you can quickly spray water onto the heated oven walls with your fingers to create steam. In this step, it is crucial to work very quickly so that the open oven does not cool down too much.
