INGREDIENTS

  • 2 eggplants, 450 g each
  • 2 teaspoons tahini paste
  • 1 tablespoon lemon juice
  • 1 crushed clove of garlic
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • 1 coffee spoon freshly ground pepper

INSTRUCTIONS

    Preheat the oven to 180 °C.

    Place the eggplants on a baking sheet in the preheated oven and bake for 40 minutes. Then, cut them lengthwise, carefully scoop out the flesh with a spoon, and let it cool. Finely chop it and place it in a bowl.

    Add the remaining ingredients and mix thoroughly.
Tip
Instead of tahini paste, you can mix 2 teaspoons of mayonnaise into the dish. This will give you another interesting flavor.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
