INGREDIENTS

  • 8 eggs
  • 240 g cream cheese
  • 120 g plain yogurt
  • 1.5 tablespoons full-fat mustard
  • 10 g salt
  • pinch of pepper

INSTRUCTIONS

    Boil the eggs, peel them, and cut them lengthwise. Scoop out the yolks into a bowl, and finely chop the whites.

    Mash the yolks with a fork, add cream cheese, yogurt, mustard, salt, and pepper, and mix.

    Add the chopped whites, mix, and chill in the refrigerator.
Tip
You can replace part of the full-fat mustard with Dijon mustard for a sharper taste. You don't have to chop all the egg whites into the spread; you can fill some of them with the spread. You can add finely chopped flat-leaf parsley or chives to the spread.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
