- 80 g peeled shallots
- 70 ml red wine vinegar
- 40 g caster sugar
- 1.5 teaspoons of salt
- 80 g olive oil

Finely chop the shallot. Put two-thirds into a tall, narrow container, add the vinegar, 100 ml of water, sugar, and salt, and blend lightly with a stick blender.

Slowly pour in the oil while constantly blending until an emulsion forms. Then add the remaining shallot and stir. Put the dressing in the fridge to chill.
