INGREDIENTS
- 80 g peeled red onion
- 2 cloves garlic
- red chili pepper to taste
- 350 g tomatoes
- 30 ml red wine vinegar
- 20 ml lemon juice
- 1 tablespoon finely chopped flat-leaf parsley
- 1 tablespoon finely chopped basil
- 1 teaspoon finely chopped thyme
- 80 g olive oil
- 1 teaspoon salt
Instructions
- 1Finely chop the onion. Peel the garlic, cut it lengthwise, remove the germ, and finely grate or press it. Finely chop the chili pepper.
- 2Cut the tomatoes into quarters and remove the tough core, including the seeds. Dice the flesh into small cubes.
- 3Mix the onion with vinegar, lemon juice, and garlic. Add the chopped tomatoes, herbs, and oil.
- 4Add salt and chili pepper to taste and mix.
