INGREDIENTS FOR THE SALAD
- 4 eggs
- 500 g green asparagus
- 280 g whole wheat couscous
- Bunch of radishes
- Salt
- Pepper
- Sunflower seeds
- 1 punnet mixed salad greens
INGREDIENTS FOR THE DRESSING
- 40 ml olive oil
- 40 g coarse-grain mustard
- 40 g honey
INSTRUCTIONS FOR THE DRESSING
- 1Mix olive oil, mustard, honey, and 1 tablespoon of water.
INSTRUCTIONS FOR THE SALAD
- 1Place eggs in boiling water and cook for 9 minutes. Transfer cooked eggs to cold water.
- 2Pour 300 ml of hot water over the couscous, season with salt, and let rest for 5 minutes.
- 3Wash the asparagus stalks and snap off the woody ends. This will be easy. Bend the stalk at the bottom, and it will break off naturally where it is no longer woody. Cook in salted water for 2-3 minutes. Cooking time depends on the thickness of the stalks. Transfer the cooked asparagus to cold water to stop the cooking process.
- 4Slice the radishes thinly.
- 5Mix the couscous with the salad greens and radishes. Divide among plates. Top with asparagus and halved eggs. Sprinkle with sunflower seeds and drizzle with the prepared dressing.
