Ingredients
- 400 g Hokkaido pumpkin, diced
- 90 g coconut flour
- 3 pcs eggs size M
- 65 g honey
- 150 g fresh blackberries
- 5 g ground cinnamon
- 25 g ground mace
- 16 g vanilla sugar
- 12 g baking powder
- 100 ml apple juice
- 1 pc muffin pan
Instructions
- 1Preheat the oven to 180 degrees Celsius – top and bottom heat. Place the pumpkin on a baking sheet lined with parchment paper. Sprinkle with cinnamon, mace, and vanilla sugar. Pour 0.5 dl of apple juice over it and bake until soft, about 20 – 25 minutes.
- 2Once the pumpkin is ready, blend it together with coconut flour, baking powder, eggs, and honey. If necessary, thin the batter with apple juice. The consistency of the batter should be slightly thicker, not runny.
- 3Fill paper liners 3/4 full, place a few blackberries into each muffin, and bake for about 40 minutes. Check with a skewer to see if the batter is sticky. Instead of sugar, sprinkle with coconut flour.
