- 1 pc of onion
- 2 cloves of garlic
- 600 g of zucchini
- 700 ml of vegetable stock
- 200 g of feta cheese
- 1 tablespoon of clarified butter
- 1 tablespoon of olive oil
- 1 pinch of salt
- 1 pinch of pepper
Heat the clarified butter together with the olive oil in a pot. Add the finely chopped onion and minced garlic cloves, and sauté over medium heat for about 6 minutes.
Wash the zucchini, slice it into rounds, and add it to the pot. Sauté for about 10 minutes, then pour in the vegetable stock. Cover the pot with a lid and simmer the soup for 10–15 minutes until the zucchini is completely soft.
Remove the soup from the heat, let it cool slightly, and blend it with a hand blender. Season with salt and pepper and serve with coarsely crumbled feta.
