Preparation method

Finely chop the onion. Peel the garlic, cut it lengthwise, remove the central germ, and finely grate or crush it. Finely chop the chilli pepper.

Cut the tomatoes into quarters and cut out the tough core including the seeds. Cut the flesh into small cubes.

Mix the onion with the vinegar, lemon juice, and garlic. Add the chopped tomatoes, herbs, and oil.
