- 200 g of red lentils
- 100 g of white onion
- 200 g of canned peeled chopped tomatoes
- 400 ml of canned coconut milk
- 700 ml of vegetable broth
- 120 g of sour cream
- 60 g of pumpkin seeds
- 1 tbsp of olive oil
- 1 tsp of cumin
- 1 pinch of salt
- 1 pinch of pepper

Heat the olive oil in a pot and sauté the finely chopped onion until translucent. Add the cumin and fry briefly until fragrant. Then add the rinsed red lentils, canned peeled tomatoes, and pour in the vegetable broth and coconut milk.

Bring the mixture to a boil and simmer over low heat for about 20 minutes, until the lentils are soft. Blend the soup until smooth, and season with salt and pepper. Serve garnished with a dollop of sour cream and pumpkin seeds.
