  • 40 g polenta (cornmeal)
  • 80 g cane sugar
  • pinch of salt
  • 125 g softened butter
  • 50 g candied orange peel

    Line two baking sheets with parchment paper.

    Chop the orange zest into smaller pieces. Mix the flour with polenta, cane sugar, and salt. Work in the butter until well combined, then add the orange zest. Take small pieces of dough with a teaspoon and form them into balls. Place them on the baking sheet with larger gaps, as they will spread significantly during baking. Lightly flatten the balls.

    Bake for 10 minutes in an oven preheated to 180°C with a fan. After baking, let them cool on the baking sheet, then peel the cookies off the parchment paper.
