INGREDIENTS
- 280 g all-purpose flour (200 g for dough, 80 g for crumble)
- 140 g butter (100 g for dough, 40 g for crumble)
- 150 g sugar (50 g for dough, 50 g for filling, 50 g for crumble)
- 2 eggs
- Zest of one lemon
- Pinch of salt
- 300 g rhubarb (peeled, cut into pieces)
- 200 g strawberries (cut into quarters)
- 1 vanilla sugar
- 50 g almond flakes
INSTRUCTIONS
- 1First, prepare the dough. Pour flour, sugar, salt, and lemon zest into a bowl. Add cold butter and rub with your fingers until a coarse crumble forms. Add the egg and quickly work the dough. Wrap it in foil and refrigerate, preferably overnight.
- 2Peel the rhubarb and cut it into smaller pieces, slice the strawberries. Mix them in a bowl with sugar and vanilla sugar. Rhubarb is very sour, so add sugar to taste if necessary.
- 3Mix flour, sugar, and butter – work into a crumble. Add almonds and mix.
- 4Roll out the chilled dough and transfer it to a pie dish, prick the bottom with a fork. Pour in the fruit filling and sprinkle with crumble on top.
- 5Bake in a preheated oven at 180 °C for 40–45 minutes, until the surface is golden brown.
