INGREDIENTS
- 250 g potatoes cooked in their skins and 250 g raw potatoes
- salt
- 3 eggs
- 300 g coarse flour
- 1 teaspoon starch
- 60 g butter or lard
INSTRUCTIONS
- 1Bring a large amount of water to a boil in a pot. Season the water with salt.
- 2Peel the cooked potatoes, grate them coarsely, and place them in a bowl. Peel the raw potatoes, grate them finely, and add them to the cooked potatoes. Add 1 teaspoon of salt, eggs, coarse flour, and starch. Mix into a thick dough.
- 3Using a tablespoon, form dumplings in the shape of larger gnocchi in a wet palm and place them into the salted boiling water.
- 4Cook the dumplings for 6–7 minutes. When they are done, they will float to the surface. Transfer them to a bowl with melted lard or butter, to taste, and mix.
Tip
Prepare the dumplings from potato varieties B or C. Coat the finished dumplings in melted lard or butter to prevent them from drying out.
