Ingredients overview
- 8 eggs
- 240 g Gervais cheese
- 120 g plain yogurt
- 1.5 tbsp classic mustard
- pinch of pepper
- 10 g salt

Boil the eggs, peel them, and cut them lengthwise. Scoop out the yolks into a bowl, and finely chop the whites.

Mash the yolks with a fork, add the Gervais cheese, yogurt, mustard, salt, and pepper, and mix.

Add the chopped whites, mix, and chill in the refrigerator.
Chef's tip
You can replace part of the classic mustard with Dijon mustard for a sharper taste. You don't have to chop all the egg whites into the spread; you can fill some of them with the spread. You can add finely chopped flat-leaf parsley or chives to the spread.
