FLAVORED BROTH
- 400 g boneless, skinless chicken breasts
- 1.4 l chicken broth
- 100 g spring onion
- 40 g fresh coriander
- 40 g peeled ginger, finely chopped
- 10 g peeled garlic, finely chopped
- 20 g red chili pepper
FOR FINISHING
- 750 ml flavored broth
- 25 g peeled ginger
- 60 g fresh coriander with stems
- 30 g white part of spring onion
- 10 g red chili pepper
- 500 ml coconut milk
- 30 g brown sugar
- 3 tablespoons fish sauce
- salt
- 5 tablespoons lime juice
FLAVORED BROTH PROCEDURE
- 1Place the broth ingredients into a pot, bring to a boil, skim off any foam, and simmer uncovered over low heat for 15 minutes. Then remove from heat and let stand for 20 minutes.
- 2Remove the meat from the pot and slice into 1 cm thick pieces. Strain the finished broth through a fine sieve into a clean pot.
FOR FINISHING
- 1Slice the ginger thinly, finely chop the coriander with stems and the spring onion. Slice the chili pepper thinly.
- 2Bring the flavored broth to a boil, add ginger and coconut milk, and bring to a boil again. Add chopped coriander, sliced meat from the flavored broth, and sugar, mix, bring to a boil, and cook for 3 minutes.
- 3Add lime juice, mix, add fish sauce, bring to a boil again and cook for another 3 minutes. Season with salt to taste. Add spring onion and chili pepper, mix and remove from heat.
Tip
You can freeze the remaining flavored broth or prepare more soup. However, you will need to increase the amount of lime juice, sugar, and fish sauce so that the soup has a balanced sweet and sour taste with a well-rounded salty finish. You can add 2 pieces of halved lemongrass and 8 kaffir lime leaves to the flavored broth. Instead of brown sugar, you can use palm sugar, which has a very characteristic flavor. You can add or reduce fresh chili to taste. For the last 3 minutes of cooking, you can add small fresh mushrooms cut into quarters or oyster mushrooms torn into smaller pieces to the soup.
