- florets from 1 medium head of broccoli
- 700 ml vegetable broth
- 1 medium white onion
- 2 tablespoons olive oil
- 2 cloves garlic
- 1 egg
- Salt
- Pepper
- Toast bread

Peel and finely chop the onion. Heat 2 tablespoons of olive oil in a pot, add the chopped onion and fry for about 5 minutes over medium heat. Meanwhile, crush the garlic, after the specified time add it to the pot and fry everything for another 1 minute. Then pour vegetable broth into the pot, add broccoli florets and cook everything over medium heat for 10–15 minutes.
Season the cooked soup with salt and pepper, remove the pot from the heat, crack an egg into it and immediately blend the entire contents of the pot with an immersion blender.
Divide the finished soup into serving plates and serve.
Chef's tip
Liven up your soup with whole-grain croutons – cut 2 slices of whole-grain toast bread into cubes and toast everything until golden brown in a dry pan over medium heat (this will take approximately 8–10 minutes).
