INGREDIENTS

  • 200 g fresh rhubarb
  • 100 g granulated sugar
  • 1 teaspoon ground cinnamon

INGREDIENTS FOR THE BATTER

  • 300 g whole wheat plain flour
  • 100 g granulated sugar
  • 70 g rapeseed oil
  • 1 egg
  • Finely grated zest from organic lemon
  • 250 g kefir
  • Salt
  • 1 teaspoon ground vanilla
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder

    Wash, peel, and cut the rhubarb into small pieces. Place them in a bowl, add cinnamon and sugar, and let the rhubarb release water for about 20 minutes.

    After this time, drain the excess water and prepare the batter.

    In one bowl, mix together the flour, sugar, salt, baking soda, baking powder, and vanilla.

    In a second bowl, mix the kefir with the egg, oil, and lemon zest.

    Pour the wet mixture into the dry ingredients and work into a batter using a spatula. Finally, add the drained rhubarb and mix everything together.

    Grease a loaf pan with a little butter and dust with breadcrumbs. Transfer the batter to the pan and bake in a preheated oven at 180 degrees Celsius for 35 minutes.

    After this time, check the batter with a skewer. If no batter sticks to it, you can remove the loaf.

    Let it cool for about 1 hour, then you can slice and eat it.
