Preparation method
First, prepare the jelly. Blend a portion of the strawberries with sugar using an immersion blender. Cut the remaining strawberries and pitted cherries into pieces and mix them into the blended mixture.
Soak the gelatin in cold water and let it soften. Gently heat the mixture and dissolve the squeezed gelatin in it. Let it cool in the refrigerator.
For the strawberry foam, place strawberries in an immersion blender container or a deep bowl. Add sugar, lemon juice, basil, and blend until smooth (puree consistency). Pour in 150 g of whipping cream and blend again.
Chef's tip
You can add a little fruit liqueur to the jelly.
