INGREDIENTS FOR THE CRUMBLE
- 260 g coarse flour
- 190 g all-purpose flour
- 60 g cocoa powder
- 1/3 teaspoon cinnamon
- 210 g cold butter, diced (plus a little for greasing the pan)
- 170 g granulated sugar
- 2 eggs
- 12 g baking powder
INGREDIENTS FOR THE QUARK FILLING
- 4 blocks of quark (in foil, not tub)
- 150 g whipping cream
- 40 g vanilla pudding powder
- 2 eggs
- 1 vanilla sugar
- 290 g granulated sugar
INGREDIENTS FOR FINISHING
- 500 g frozen forest fruit
- 150 g fresh blackberries

CRUMBLE INSTRUCTIONS
- 1Quickly and briefly mix all ingredients until a crumble consistency is achieved.
QUARK FILLING INSTRUCTIONS
- 1Thoroughly mix all ingredients.
FINISHING INSTRUCTIONS
- 1Preheat the oven to 180 ˚C top and bottom heat. Line the bottom of a square baking pan with parchment paper, grease the sides with butter. Lightly press two-thirds of the crumble mixture onto the bottom of the pan. Spread the quark mixture over the base and smooth it out, then top with frozen and fresh fruit (you can gently press it into the quark). Layer the remaining crumble on top.
- 2Bake for an hour and a quarter, and from about 50 minutes, check the color of the crumble on top. If necessary, cover with aluminum foil to prevent it from browning too much, or after an hour, switch the oven to bottom heat to ensure the bottom bakes through.
- 3Once cooled, cut into slices and you can decorate individual slices with fresh fruit.
