INGREDIENTS
- 500 g flesh from fresh ripe mango (1 large mango)
- 250 g frozen mango
- 1 tablespoon lemon juice
- 50 g honey
INSTRUCTIONS
- 1Peel the fresh mango and cut it into pieces. Heat the frozen mango until soft. Add to the fresh mango and blend with an immersion blender. Strain through a sieve (this will remove fibers that would be disruptive in the sorbet). Place in a pot, add honey and lemon juice, and heat gently so that the honey combines well with the mixture.
- 2Then let it cool and pour into a prepared ice cream maker. If you don't have one, place it in a container in the freezer. Stir approximately two to three times while it's setting.
- 3Before serving, remove from the freezer approximately 20 minutes in advance.
