INGREDIENTS FOR CHIPOTLE DRESSING
- 150 g Greek yogurt 10% fat
- Juice of ½ lime
- 1 teaspoon brown sugar
- ½ teaspoon ground chili
- ½ teaspoon dried garlic
- 1 teaspoon dried onion
- ½ teaspoon salt
- ½ teaspoon ground red paprika
INGREDIENTS FOR SALAD
- 200 g red beans in brine
- 100 g cherry tomatoes
- 80 g canned corn
- 1 piece red pepper
- 1 piece yellow pepper
- 1 small avocado
- ½ - 1 piece romaine lettuce
- A handful of fresh coriander
- 100 g fresh cheese
INSTRUCTIONS
- 1Mix all the ingredients for the dressing and set it aside in the fridge.
- 2Drain and rinse the beans. Halve the tomatoes. Cut the peppers and avocado into cubes, and the lettuce into strips. Finely chop the coriander.
- 3Serving: Place the lettuce at the bottom of the bowl, drizzle with chipotle dressing, and sprinkle with coriander. Layer the vegetables on top, sprinkle with crumbled cheese, and drizzle again with chipotle dressing.
