INGREDIENTS FOR THE SALAD
- 2 eggs
- 50 g bacon
- 1 chicken breast
- 1 Romaine lettuce
- 150 g tomatoes
- 1 shallot
- 1 small avocado or half of a larger one
- 50 g blue cheese
INGREDIENTS FOR THE DRESSING
- 1 tablespoon red wine vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
- Freshly ground pepper
- Salt
INSTRUCTIONS
- 1Place the eggs in water, bring to a boil, and cook for 6-8 minutes. Afterward, transfer the eggs to cold water, let them cool, and peel them.
- 2Cut the bacon into small cubes and fry in a pan until golden. Remove it from the pan, leave the rendered fat, and fry the chicken breast, seasoned with salt, in it. Fry the breast on all sides over medium heat until cooked through. Then let it rest for a few minutes and cut into pieces.
- 3For the dressing, mix the listed ingredients and season with salt and ground pepper.
- 4Wash the Romaine lettuce and cut into strips, tomatoes into smaller pieces, shallot into strips, pour the dressing over and mix. Peel and pit the avocado and cut into thicker strips or cubes.
- 5Place the lettuce, halved eggs, chicken pieces, avocado, and bacon into a bowl. Sprinkle with cheese pieces and serve.
