- 200 g cottage cheese
- 2 pcs of eggs
- 120 g of milk
- 100 g of gluten-free oat flour
- 4 g of gluten-free baking powder
- oil for frying
- Greek yogurt for serving
- fresh fruit (raspberries, strawberries, blueberries)
- maple syrup
Preparing the batter

Blend the cottage cheese together with the eggs and milk until smooth. Add the oat flour and baking powder. Whisk with a balloon whisk until smooth.
Frying and serving

Brush a pan with a little oil and heat it up. Reduce the heat to medium and use a spoon to pour the batter onto the pan to form individual pancakes. The pan can fit 3-4 pancakes. Fry them on both sides and place them on a wire rack. Serve the finished pancakes with Greek yogurt, fruit, and maple syrup.
