INGREDIENTS

  • 200 g red lentils
  • 400 g crushed canned tomatoes
  • 120 g sweet potatoes
  • 40 g shallot
  • 60 g olive oil
  • 8 g whole cinnamon
  • 2 bay leaves
  • 2 sprigs thyme
  • grated zest of ½ lemon
  • 2 tablespoons julienned flat-leaf parsley
  • 2 teaspoons salt
  • pinch of chili
  • 2 tablespoons red wine vinegar
  • 2 lžíce červeného vinného octa

INSTRUCTIONS

    Peel the shallot and chop finely. Peel the garlic and slice. Peel the sweet potatoes and cut into 1 cm cubes.

    In a saucepan over medium heat, warm 40 g of olive oil and sauté the shallot until softened. Add the bay leaf, cinnamon, chili, and garlic, and sauté for 1 minute, stirring constantly. Add the wine vinegar, thyme, mix, add the lemon zest, mix, and let all the liquid evaporate.

    Add the sweet potatoes, mix, add the crushed tomatoes, 700 ml of boiling water, and let it cook for 7 minutes. Add the lentils and cook over medium heat until tender.

    Remove the cinnamon and thyme, then stir in the chopped parsley and the remaining oil.
Tip
Add only the yellow part of the lemon zest. The white part is bitter. Cooking time may vary depending on the age and type of lentils.
