CRUMBLE INSTRUCTIONS
In a bowl, mix flour, butter, 125 g sugar, 1 egg, and baking powder. Quickly and briefly mix all ingredients until a crumble consistency is achieved.
QUARK FILLING INSTRUCTIONS
In another bowl, whisk both types of quark, the remaining 180 g sugar, 3 eggs, pudding powder, and vanilla sugars with an electric mixer until a smooth cream is formed.
FINISHING INSTRUCTIONS
Preheat the oven to 180˚ top and bottom heat. Grease the pie dish with butter and dust with flour. Lightly press two-thirds of the crumble onto the bottom of the dish and form a low edge. Spread the quark mixture over the dough, arrange the destemmed, washed, and drained currants, and then layer the remaining crumble on top.
Chef's tip
If you don't have fresh currants, the cake is also excellent with other small fruits (raspberries, blueberries, strawberries) or you can use frozen fruit.
