Rolled pork belly, cured for 3 weeks in sea salt and a spice mix dominated by the flavors of thyme and garlic. It is then air-dried for 6 months, giving it a distinctive taste and aroma. We slice it into thin pieces, which separate easily after being tempered to room temperature, enhancing their flavor even further.
