INGREDIENTS
- 2 pcs prickly pears
- 1 pc yellow bell pepper
- 1 pc red bell pepper
- 100 g cherry tomatoes
- 1 small avocado
- ½ pc red onion
- 1 chili pepper
- 70 g mixed leafy greens
- 100 g canned beans
- 100 g canned corn
- 50 g black olives
- Freshly ground pepper
- Salt
- 1 tablespoon olive oil
- 1 small handful fresh coriander
- 1 tablespoon lemon juice
INSTRUCTIONS
- 1Wash the vegetables, deseed the bell peppers and cut them into cubes, quarter the cherry tomatoes. Cut the avocado in half, remove the pit, peel the skin, and cut into cubes. Slice the onion into strips.
- 2Peel the prickly pears; they may have small thorns, so proceed carefully. Cut the prickly pears into quarters and then into slices.
- 3Cut the chili pepper in half, deseed it, and chop finely.
- 4Place everything into a bowl and add the remaining ingredients. Drizzle with olive oil and season with salt and pepper. Finally, sprinkle with coriander leaves.
