Ingredients

  • 400 g wheat plain flour
  • 250 g butter
  • 200 ml whipping cream

For the Filling

  • 1 egg yolk
  • 250 g semi-fat curd cheese
  • 2 tablespoons brown sugar
  • 37 g vanilla pudding powder
  • 200 g any jam

For Brushing

  • 1 egg white

For Sprinkling

  • 1 tablespoon powdered sugar

    Prepare the dough: In a large bowl, mix 400 g of plain flour, butter, whipping cream, and a pinch of salt to make a smooth dough.

    Wrap the finished dough in cling film and let it rest in the refrigerator for 30 minutes.

    Meanwhile, prepare the fillings: In a medium-sized bowl, mix the egg yolk, curd cheese, brown sugar, and ⅓ of the pudding powder. Pour the remaining pudding powder into a smaller bowl and mix with the jam.

    Preheat the oven to 160 °C and line 2 baking trays with baking paper.

    After 30 minutes of chilling the dough, take it out of the refrigerator, divide it into two halves, and process each part separately: First, dust your work surface with 20 g of plain flour and roll out the dough on the floured surface into a square sheet about 2⁠–⁠3 mm thick. Cut the sheet into squares about 6 cm × 6 cm and place 1 teaspoon of filling in the center of each square (use the curd filling for the first half of the dough and the jam filling for the second). Then join and press together the opposite corners of each square in the style of an envelope to create pastries. Place the prepared pastries on the lined trays ⁠–⁠ place the curd pastries on one tray and the jam pastries on the other.

    Once you have processed all the dough and both fillings, mix the egg white with 1 tablespoon of water in a small bowl and brush all the pastries with the resulting mixture. Then place both trays in the oven and bake for 30⁠–⁠33 minutes at 160⁠–⁠165 °C.

    Sprinkle the baked pastries with a total of 1 tablespoon of powdered sugar and let them cool for 10 minutes. Then you can serve the pastries.
