INGREDIENTS

  • 400 g turkey breast
  • 2 celery stalks
  • 2 apples (ideally sweet and sour)
  • 50 g walnuts
  • 50 g pecans
  • 100 g grapes (seedless)
  • 100 ml mayonnaise
  • 100 ml sour cream
  • Juice of 1 lemon
  • 1 tablespoon cane sugar
  • Salt
  • Pepper
  • 4 large handfuls of mixed salads - lamb's lettuce, arugula, red chicory..
  • Red radish sprouts for garnish

INSTRUCTIONS

    First, clean the turkey breast, season with salt and pepper. Grill or pan-fry for about 8-10 minutes on each side until beautifully cooked through. Then let the meat cool down and slice it thinly.

    While the meat is cooling, prepare the vegetables and fruit. Remove the tough and stringy skin from the celery, slice it thinly. Core the apples and cut them into cubes. To prevent the apples from browning, immediately drizzle them with half of the lemon juice. Halve the grapes. In a pan, melt the cane sugar with a drop of water and toast the walnuts in the resulting caramel.

    Then, in a bowl, mix mayonnaise, sour cream, and the rest of the lemon juice. Season with salt and pepper.

    In a large bowl, mix the salad, apples, celery, pecans, and grapes together with the dressing.

    Place on a plate, sprinkle with caramelized walnuts, and add the grilled meat. Finally, garnish with red radish sprouts.
