Croissant with Chive Spread, Prosciutto and Figs

Preparation method

First, prepare the chive spread. In a bowl, mix Gervais (or fresh cheese), add chopped chives, olive oil, season with salt and pepper. Chill in the refrigerator.

In a pan, melt coconut sugar with a teaspoon of water and mix with nuts. Let it caramelize for a while, then remove from heat and let cool. This will create nuts with a caramel crust.

Slice the croissants lengthwise. Spread with the chive spread, layer with spinach and prosciutto slices. Add sliced figs. Sprinkle with fresh thyme and nuts.
