INGREDIENTS

  • 200 g all-purpose flour
  • 200 ml semi-skimmed milk
  • 2 eggs
  • 200 g Gouda
  • 200 g ham
  • 1 baking powder with cream of tartar
  • 2 large shallots
  • 1 handful fresh basil
  • 1 tablespoon olive oil
  • 1 tablespoon cane sugar
  • Pinch of ground coriander
  • Salt

INSTRUCTIONS

    Preheat the oven to 180 degrees Celsius - top and bottom heat. Finely chop the shallot, dice the ham, and grate the cheese on a coarse grater. Heat olive oil in a pan and sauté the shallot until translucent, then add half of the ham and the cane sugar. Let it caramelize rapidly for a few minutes.

    In a large bowl, mix the flour with the baking powder. Add milk, eggs, and mix well. Add the grated cheese, the other half of the ham, and chopped basil. Season with salt and ground coriander.

    Fill paper muffin cups 3/4 full and sprinkle with the caramelized shallot and ham. Bake for 35 - 40 minutes in the oven. Test with a skewer to see if the dough is sticky.
Tip
The dough can also be baked in an oiled bundt cake pan. Bake for 45 - 50 minutes at 180 degrees Celsius.
