Finely grind the nuts. In a bowl, mix almond flour, oat flakes, and ground nuts. Add melted coconut oil, almond butter, and sweeten with chicory syrup. Knead into a consistent dough. Ideally, use bar molds for shaping. If you don't have them, form symmetrical bars by hand. Chill in the refrigerator for at least an hour. For faster cooling, you can also use the freezer.
Blend the spinach with a little water. Melt the white chocolate in a bain-marie. Add spinach to half of it and color the chocolate green. Dip the Frankenstein bars in green chocolate, and after drying, decorate with brown chocolate, making eyes from almonds. Put the white chocolate into a piping bag and snip off the corner. Drizzle the bars with chocolate, make eyes, and decorate with jam.
