Preparation method

Wash the zucchini, cut off the stem, and slice into very thin slices, preferably using a mandoline.

For the dressing, mix all the ingredients together and whisk lightly with a fork until smooth and thick.

Toast the pine nuts in a dry, hot pan until golden brown. It only takes a few minutes.
