Preparation method
Thoroughly wash the limes with hot water. Cut off the ends and cut each lime into quarters. If the limes have a very thick white pith in the middle, remove it to prevent bitterness.
Put the chopped limes, sugar, and cold water into a blender. Blend only briefly (approx. 5–10 seconds) – the limes should be chopped, but not completely pureed, otherwise the drink will be bitter.
Strain the mixture through a fine sieve into a pitcher. Discard the solid parts of the limes.
Chef's tip
The key to success is blending the limes briefly. If you blend them for too long, bitterness from the peel will be released.
Serve the lemonade immediately after preparation, it tastes best fresh.
