INGREDIENTS
- 700 g watermelon flesh
- 350 g cantaloupe melon flesh
- 120 g cucumber
- 200 g feta
- 1 tablespoon olive oil
- Juice of half a lemon
- Salt
- Freshly ground pepper
- A handful of fresh mint
INSTRUCTIONS
- 1Cut both types of melon into cubes, peel the cucumber, halve it, remove the central part with seeds, and slice it. Put everything into a large bowl.
- 2Cut the feta into cubes as well and add it to the melon and cucumber.
- 3Add oil, lemon juice, salt, pepper, and finely chopped mint. Mix well. Serve chilled.
