- 4 pcs tortillas
- 8 pcs eggs
- 150 g cheese
- 1 avocado
- 1 shallot
- Fresh leaf spinach

INSTRUCTIONS
- 1Scramble the eggs in a pan with a little salt and pepper. Dice the avocado and shallot, and grate the cheese.
- 2Place a tortilla on a cutting board. Take a knife and make a cut from the center of the tortilla down to the edge.
- 3Imagine the tortilla is divided into four sections (in half, and each half again in half). You will place a different ingredient into each section.
- 4Place scrambled eggs on the first section to the left of the cut. On the next section, place half of the diced avocado and a handful of diced shallot. The next section of the tortilla will get cheese, and in the last section, place a handful of baby spinach.
- 5Now you can start wrapping. First, fold the egg section over the avocado, then fold both sections over the cheese, and finish the wrap by folding it over the spinach section. For a clearer demonstration, watch the video above.
- 6Toast the wrapped tortilla dry on both sides in a pan, a contact grill, or a toaster.
