Clean the mushrooms and cut them into smaller pieces.

Wash the pak choi and halve it. Finely chop the garlic, ginger, and chili.

Sauté the garlic, ginger, and chili in sesame oil. Add the shiitake mushrooms, sauté for about 3 minutes, then add the chopped pak choi. Add hoisin and season with fish sauce. Pour in 5 tablespoons of water (or broth) and reduce for 2-3 minutes.
