INGREDIENTS

  • 180 g soba noodles
  • 2 finely chopped shallots
  • a piece of finely chopped ginger
  • 2 cloves of finely chopped garlic
  • 1/2 - 1 fresh chili
  • 2 tablespoons vegetable oil
  • 2 tablespoons sesame oil
  • 150 g tofu, diced into smaller cubes
  • 1 carrot, julienned
  • 150 g broccoli, cut into smaller pieces
  • mung bean sprouts, or beans
  • 1 chopped spring onion
  • Pepper

SAUCE INGREDIENTS

  • 6 tablespoons Soy Sauce
  • 1 tablespoon lime juice or rice vinegar
  • 1 - 2 tablespoons fish sauce (to taste)
  • 1 small teaspoon cane sugar

GARNISH INGREDIENTS

  • Sesame

INSTRUCTIONS

    Cook soba noodles according to package directions (approx. 2 - 3 minutes), then drain.

    Heat vegetable and sesame oil in a wok or pan.

    Add shallots, ginger, garlic, and chili. Let them become fragrant.

    Add broccoli, pour in half of the sauce, and cook for about 2 minutes.

    Add tofu, soba noodles, carrots, and the rest of the sauce, then mix.

    Finally, add spring onion.

    Mix everything, season, pepper, and sprinkle with sesame seeds.
