Ingredients overview
- 6 apricots
- 2 teaspoons of cane sugar
- 20 ml of lime juice
- half a lime
- handful of mint
- sparkling water
- ice
Stone and halve the apricots, then place them in a blender along with a tablespoon of water. Blend into a puree; if you want the mixture to be really smooth, strain it through a fine sieve.
Add lime juice, lime, a teaspoon of cane sugar, and mint leaves to each glass. Muddle the mixture thoroughly to release and combine the flavours, then add three teaspoons of apricot puree to each glass.
Fill the glasses with ice cubes, top up with sparkling water, add a straw, and stir everything. If you fancy an alcoholic version, you can add white rum.
